In 1985 Chef Vargas emigrated from Mexico to the United States with dreams to own his own business in the food industry. At a very young age, Jose’s dad would take him to work and it was at that time that Jose discovered his passion for the kitchen. Jose attended The School of Mexican Gastronomy (Escuela de Gastronomía Mexicana) and has been cooking ever since for over 33 years.
Besides cooking, he also enjoys spending time with his wife, two daughters and grandson, in addition to watching soccer. Jose has lived in California, Puerto Rico, and Philadelphia where he has worked as an Executive Chef for major hotel chains like The Wyndham Hotel, El Conquistador and The Embassy Suites. He has cooked at important events such as, the inauguration of The Ronald Reagan library in California, and The Democratic Governors Association at El Conquistador Resort. Jose cooks with imagination and through the years he has mastered and widened his culinary skills.
With hard work and dedication, Jose has been able to save money to start his own business. The concept that Chef Vargas wants to share is that gourmet food does not necessarily have to be expensive or served at exclusive restaurants. He believes that everybody should be able to enjoy good dinning at reasonable prices and that is what he wants to offer his guests. Hence, he makes an extra effort to maintain reasonable pricing in the menu items. He looks forward to preparing the thousands of recipes he has compiled through the years at Chef Vargas BYOB.
